Japanese chef Sachiko Saeki’s artistic expertise and cooking techniques inspired by her family’s Buddhist beliefs has seen her guest in Hugh Fearnley-Whittingstall’s kitchen and work with The Guardian as well as teaching Japanese cooking at Leith’s School of Food and Wine in London. Now nicely settled into the smart, contemporary confines of the Quarter Horse on Bristol Street, chef Sachiko Saeki may just have found her perfect pop-up niche. Back from forays overseas learning new knife techniques and furthering her development of Japanese cooking, Sachiko will be showing off her skills just in time for Valentine’s. Menu features intense explosions of flavourful expertise in the form of Japanese Tapas Starters such as cured salmon with sake kasu, aubergine and fried tofu with haccho miso and egg roll with eel, followed by Kinome Kitchen Hot Pot of slow cooked beef served with turnips and crispy leek with dipping miso. A Vegetarian menu is available with Saeki’s expertise in this area equalling if not excelling the creativity of the meat menu, vegan options can also be arranged. Mouthwatering stuff and with desserts also exhibiting this artistic blend of fine flavours and fanciful, artistic flourish and selected beers, sake tasters and cocktails, it’s the stuff foodie dreams are made of.
